Washoku and Japanese Alcohol seminar

The Embassy of Japan, in collaboration with Ecole Hôtelière Sir Gaëtan Duval, Hennessy Park Hotel and Reynaud Les Halles, organized “Washoku (Japanese cuisine) and Japanese Alcohol seminar” at the Ecole Hôtelière SGD in Ebène on Monday 27th of January 2020.
The Washoku seminar was presented by Mr. NAKAHARA Keiichi, Japanese chef from the Sushi Me restaurant of the Hennessy Park Hotel. He worked in Paris for many years as Sushi Chef. He demonstrated how to clean and fillet a salmon and a tuna. Also, he taught his technique to make sushi roll and authentic sushi to the culinary course students of Ecole Hôtelière. Althougt it was difficult for them to make sushi, they were happy with this seminar since they could acquire the knowledge of Japanese cuisine.
The Japanese Alcohol part was presented by Mr. Fabrice Grégoire, Beverages specialist from Reynaud Les Halles. In this seminar, he explained the types of Japanese sake, how it is made and how to taste it. After the lecture, the students tasted some types of Sake available in Mauritius.
